CHARACTERISTICS AND VINIFICATION
The grapes are harvested in mid-August and are brought immediately to the cellar in the cooler hours of the day to undergo soft pressing.
Fermentation takes place at a low temperature (14°C), to preserve the aromas.
The wine is stored in steel tanks until March and then bottled to allow “prise de mousse”.
The bottled wine spends about 12 months on lees and is then disgorged.
ORGANOLEPTIC ASSESSMENT AND PAIRING
Fine and persistent perlage. Straw-yellow colour. Intense bouquet with scents of crusty bread accompanied by hay and acacia honey notes.
Delicate and balanced palate.
Serving temperature: 10°C.
