VINIFICATION
ANNA comes from a small part of an old vineyard planted in particular soil rich in white calcareous marl.
The grapes come from vines that are over 60 years old and require no thinning because they bear only a very few bunches.
They are harvested by hand, when perfectly ripe, into small crates.
The grapes are selected by hand before vinificati on to ensure their integrity.
Production is very limited and does not reach 2000 bottles a year.
Fermentation and maceration take place at a temperature of 28 °C and last about 20 days.
Long ageing in French wood barrels ensures perfect maturation.
ORGANOLEPTIC ASSESSMENT AND PAIRING
Colour: deep ruby red with garnet highlights.
It has intense and rich aromas, with notes of quinine, liquorice and black fruits, a savoury palate, with great structure and fmesse, but also feisty and well supported by acidity, for a long andjuicy fmish.
