CHARACTERISTICS AND VINIFICATION

Average yield per hectare: 45 hl
The grapes are harvested when perfectly ripe (September-October).
Vinification with destemming, crushing and maceration with skins for 20 days.
Temperature-controlled fermentation at 28-30°C.
Upon completion of malolactic fermentation, the wine matures in large wooden barrels.

ORGANOLEPTIC ASSESSMENT AND PAIRING

Deep ruby red colour. Aromatically rich in fruity scents with vanilla notes, forming a harmonious and pleasant bouquet. The palate is full-bodied, supported by a nice acidity and characterised by a smoothly spicy finish.

Excellent with flavoursome rice and pasta dishes, perfect with red meats and game. It also pairs very well with charcuterie and mature cheeses.
